These specialised fungi colonise plant roots in a symbiotic manner and extend far into the soil. Mycorrhizal fungal filaments in the soil are truly extensions of root systems and are more effective in nutrient and water absorption than the roots themselves. More than 95 percent of terrestrial plant species form a symbiotic relationship with beneficial mycorrhizal fungi, and have evolved this symbiotic relationship over the past several hundred million years. These fungi predate the evolution of terrestrial plants, and it was the partnership with mycorrhizal fungi that allowed plants to begin to colonise dry land and create life on Earth as we know it.

The mycorrhizal symbiotic relationship centres on the plant’s ability to produce carbohydrates through photosynthesis and share some of these sugars with the fungus in return for otherwise unavailable water and nutrients that are sourced from the soil or growing media by the extensive network of mycelial hyphae produced by the fungus. It’s a two-way relationship of sharing resources between two species, thus a classic symbiotic mutualism. Mycorrhizal fungi rely on the plant, and the plant’s performance and survival are enhanced by the fungus.

About our Mycorrhizal Fungi/ Mycorrhizae

Suspended powder mycorrhizal blend consisting of 9 species of endomycorrhizal fungi, 10 species of ectomycorrhizal fungi, 2 trichoderma species, and 12 beneficial bacteria species well-suited to a variety of soils, climates and plants. About 95% of the world’s plant species form symbiotic relationships with at least one of these types of symbiotic soil fungus. These beneficial fungi greatly increase the effective rooting area of plants, thereby enhancing plant growth, vigour, and tolerance of environmental extremes. This formula contains mycorrhizal propagules, which colonise roots and extend into the surrounding soil forming an essential link between plants and soil resources. Increasing the rooting area allows improved access to water and nutrients, promoting plant quality and crop performance. There are entire species of microbes that have disappeared, creating health issues that were uncommon one hundred, or even fifty, years ago. For thousands of years, their fermented vegetables have been absolutely essential at meals. In Korea, kimchi is so much more than food – it is a national cultural treasure, a universal health food and a part of the Korean identity. Koreans are obsessed with good food, and the Lim family is no exception. For two generations, they have retained the proud tradition of kimchi at the Arirang Resturant in Stockholm. This book contains the family’s most popular recipes – common, as well as rarer, kimchi recipes, Korean everyday food and the ever recurring bi-bim-bap (which literally means ‘mixed rice’). The Lim family present their version of a classic with lettuce, cabbage, chilli and ginger, but also the popular radish kimchi, kattugi, as well as the more unusual varieties with pumpkin, oysters, mushrooms, roots and other vegetables. Sourish, hot and tasty, kimchi is a wonderful accessory for most meals, not only Asian-style dishes but every imaginable Western dish. Here are ‘insider’ tips on how to go about fermenting vegetables at home. Considering it is so incredibly simple, the result is amazing, beautiful, tasty and healthy, thanks to the built-in riches of good bacteria cultures found in vegetables.

Format : Hardback

Pages: 144

Author: MCHUGH, STEVE

Cured unveils Steve McHugh’s techniques, intensifying flavors by pickling, curing, and preserving seasonal ingredients. Shannon walked away from a career in chemistry to raise her family. Shortly thereafter, her and her husband moved their family off the grid to discover a more simple, agrarian life. With only minimal solar-powered electricity, Shannon relies on practical food preservation techniques, such as fermentation, to provide nutritious food for her family while cutting food costs. In Traditionally Fermented Foods, Shannon shows readers how to preserve food using traditional fermentation techniques, often without refrigeration. An alternative to canning and freezing, traditionally fermented foods do not require modern technology to preserve. You can learn Shannons authentic preservation technique, which she depends on daily to put food on the table, so you know they work. You can also learn how fermented foods work, how to make fermented foods and how to use fermented foods in recipes.
