What is Viilli?

Organic Viili is a delicious, natural, fermented milk product that originates from Finland. The flavour is mild, not tart, and the texture is creamy and honey-like.  It is so simple to make with our fresh Heirloom Viili starter. No special equipment is needed. 

Your fresh Viili starter may look quite thin from its time in transit, but the cultures are active and after a few batches your Viili will be thick and creamy smooth. Our Viili culture is a mixture of micro-organisms (bacteria, yeast and mould) living in a dynamic balance to offer you years of economic culturing. Its ropey texture is an indication of a healthy culture. Since your fresh viili is a live active culture, it needs to be nourished as soon as possible according to the instructions provided here.

  • IMPORTANT: We only ship Viilli on a Monday, Tuesday and Wednesday so that they do not remain in transit via Australia Post over the weekend

Thank you for your feedback Esko..this culture is an ancient culture, more that hundred years old and does take a few batches to full acclimatise

Dead culture
Thank you James..this is a very robust and ancient culture. The culture is not dead..it just needs to be fermented longer. Use a flat wide bowl for maximum air on the surface and cover loosely with a dish cloth. The fermentation is complete when the slightly separates from the side of bowl. Hope this helps.
