Sourdough Chocolate Cake

If you are craving a chocolate cake, we have for you a delicious and healthier version! It has sourdough starter in it which is a great source of probiotics! You can also use different types of sugars to keep it healthier as well. This recipe came to us from Emma in the Gut Health Gurus Facebook Group!


Ingredients:


- 1 cup active sourdough starter

- 1 cup milk kefir/water kefir/coconut water kefir

- 2 cups whole wheat flour

- 1 to 1 1/2 cups sugar of choice (Rapadura, Cane Sugar, Coconut Sugar)

- 2 tsp vanilla extract

- 1 cup melted coconut oil

- 1 tsp salt

- 1 1/2 tsp baking soda

- 3/4 cup cocoa powder

- 2 large eggs


Ingredients for Icing:


 All to taste;


-Kefir Cheese

-Pinch of Celtic Sea Salt

-Powdered monk fruit sweetener



Method:


  1. 3 to 8 hours before baking the cake, mix starter, milk and flour in a large bowl and let it stand at room temperature.

  2. Preheat the oven to 180 degrees C and prepare cake tin.

  1. In a separate bowl, beat together the sugar, oil, vanilla, baking soda and cocoa powder. Add the eggs one at a time. Gently combine with sourdough mixture, beating until smooth.

  1. Pour and scrape into the prepared pan and bake for 30-40 minutes or until the skewer comes out clean. Let it cool before frosting.
