Kombucha second fermentation: How to get fizz, flavour and great results at home

You've finished your first batch of kombucha. It tastes decent, maybe a little flat, and the flavour is fairly one-note. So now what?

Kombucha second fermentation is the step that changes all of that. It's where the fizz comes from, where the flavour gets interesting, and where most home brewers go from "that was fine" to "I'm never buying kombucha again." The process is simple once you understand what's actually happening inside the bottle, and this guide covers every step with Australian timing, not a vague "leave for a few days" from someone who's never brewed through a 35°C weekend.

What is second fermentation?

Your first ferment does the heavy lifting. The SCOBY converts sweet tea into tangy, lightly acidic kombucha over 7 to 14 days, but the result comes out still or barely fizzy.

Second fermentation is where carbonation and flavour happen. You transfer the finished kombucha into sealed bottles with a small amount of sugar or fruit juice. The residual yeast still active in the liquid feeds on that added sugar and produces carbon dioxide. In a sealed bottle, the CO₂ has nowhere to escape, so it dissolves into the liquid. That's your fizz. The fruit or juice adds flavour depth and, depending on what you use, a bit of colour too.

This same process works identically for water kefir, so if you brew both, you can second ferment them the same way.

What you'll need

The single most important piece of equipment is your bottles. During kombucha second fermentation, pressure builds rapidly inside the sealed container. Regular mason jars, recycled sauce bottles, or thin glass simply aren't built for it. A weak seal means a flat brew; weak glass means a genuine safety hazard.

Use pressure-rated glass flip-top bottles designed for fermentation. They handle the carbonation pressure safely and have a bail-top mechanism that releases cleanly when you open them. 500 ml is the most practical starting size if you're buying your first set. Beyond bottles, you'll need finished kombucha from your first ferment (here's our guide to how to make kombucha if you haven't started yet), fruit juice or fresh fruit for flavouring, and a funnel. The funnel is technically optional, but you'll understand why it shouldn't be after your first pour.

Step-by-step: How to second ferment kombucha

1. Mix your flavourings. 

In a jug, combine roughly 1 part fruit juice with 9 parts finished kombucha. This ratio gives a solid balance of flavour and fermentable sugar without making the result overly sweet. If you're using whole fruit, herbs, or spices instead of juice, add them directly to the bottle.

2. Bottle it. 

Pour the mixture into your fermentation bottles, leaving 3 to 5 cm of headspace at the top. That gap gives the CO₂ somewhere to collect before it pressurises the liquid. Cap the bottles tightly.

3. Leave at room temperature. 

Set the bottles on the bench, out of direct sunlight, for 2 to 7 days. Timing depends almost entirely on temperature (more on that below).

4. Vent daily and taste. 

Open each bottle briefly once a day to release excess pressure, then reseal. This is also a good opportunity to taste your brew. When the fizz and flavour hit the level you want, transfer the bottles to the fridge. Cold temperatures slow fermentation right down and lock in the carbonation.

Your first batch probably won't be perfect, and that's fine. Second fermentation is the kind of thing that clicks after two or three rounds, once you've seen how your kitchen temperature, your preferred juice, and your timing all interact. Follow the steps, taste as you go, and adjust next time.

Flavour ideas to get you started

If this is your first kombucha second fermentation, keep it simple. These combinations are reliably good and hard to mess up.

Ginger and lemon is the one most people start with, and for good reason. Fresh grated ginger with a squeeze of lemon juice gives a clean, sharp finish. Ginger is naturally high in sugar, so it tends to carbonate strongly. You'll often get the best fizz from this combination.

Mango is probably the most forgiving option on this list. It pairs beautifully with a slightly tart first ferment, and it doesn't seem to matter much whether you use fresh or frozen. If your first batch doesn't turn out exactly how you hoped, mango will still taste good.

Go with raspberries if you want colour. It turns the brew a deep pink and adds a tart edge that plays nicely against the kombucha's own acidity. Use less than you think; a tablespoon of crushed berries per bottle is plenty.

Passionfruit pulp straight from the fruit gives a distinctly Australian flavour profile with plenty of natural sugar to drive carbonation. One passionfruit per 500 ml bottle is a good starting point.

For cooler months, apples and cinnamon are worth trying. Cloudy apple juice with half a cinnamon stick per bottle.

Start with whichever appeals and adjust the ratio from there. More juice means more sugar, which means more fizz and a sweeter result if you don't ferment it long enough to convert it all.

Getting the carbonation right

Temperature is the biggest variable, and Australian seasonal swings make a real difference to how your kombucha second fermentation plays out.

Summer (above 24°C) speeds things up noticeably. You might get solid carbonation in 2 to 3 days, sometimes less. Vent daily without fail, and don't leave bottles unattended over a hot weekend. Over-carbonated bottles can overflow dramatically when opened.

Once the temperature drops below 18°C in winter, the yeast slows right down. Expect 5 to 7 days for the same level of fizz, and the results may be milder overall. If your house sits below 15°C, carbonation can stall entirely. Moving bottles somewhere slightly warmer (top of the fridge, near a warm appliance) helps nudge things along.

Most batches perform their best between 20 and 24°C. If your kitchen sits in that range, three to five days should give a reliable result without too much babysitting.

Beyond temperature, the amount of added sugar and the headspace in your bottles both affect the outcome. Less headspace means faster carbonation but higher pressure. More sugar means more potential fizz, but also a higher risk of over-carbonation if left too long.

Troubleshooting: When things don't go to plan

Flat brew? Check your bottle seals first. Worn gaskets are the most common culprit and the easiest fix. If the seals are fine, the issue is usually upstream: either the first ferment didn't carry enough active yeast into the bottle, or there wasn't enough added sugar for the yeast to work with.

Too fizzy or explosive opening? This one's almost always a timing issue. The ferment ran longer than it needed to, or your kitchen was warmer than you thought. Shorten the second ferment by a day next time, or move bottles to the fridge sooner. And open carefully: point the bottle away from your face and crack the lid slowly. Cleaning kombucha off the ceiling gets old fast.

If your brew tastes more like vinegar than kombucha, the problem started before you bottled it. Kombucha that's already very sour going into second fermentation won't mellow out — it just gets more acidic. The fix is in the timing of your first ferment: bottle while there's still a touch of residual sweetness left.

Mould is genuinely rare during second fermentation. The sealed, acidic environment makes it difficult for mould to establish, so if you're seeing something floating, it's most likely yeast strands or sediment, both normal and harmless. Actual mould is fuzzy, raised, and typically green, white, or black. If that's what you've got, discard the batch.

Second fermentation for milk kefir

Milk kefir second fermentation works differently. The goal here isn't carbonation; it's flavour development and additional probiotic activity.

After straining your finished milk kefir, add honey, fresh fruit pieces, or spices to the kefir in a sealed jar. A small piece of lemon peel, a couple of fresh berries, or a pinch of turmeric with a drizzle of honey all make good starting points. Seal the jar and leave it at room temperature for 12 to 24 hours. The kefir will thicken slightly and take on the flavours you've added. Refrigerate and consume within a few days.

Frequently asked questions

Can I use plastic bottles for kombucha second fermentation?

Not recommended. Plastic can leach under acidic conditions and doesn't handle pressure as reliably as glass. Pressure-rated glass bottles are the safest and most effective option.

How do I know when my second ferment is ready?

Vent a bottle and taste it. If the fizz level and flavour suit you, it's done. There's no universal timer because temperature, sugar content, and personal preference all play a role. When you're happy with it, move the bottles to the fridge to stop the fermentation.

Can I second ferment water kefir the same way?

Yes, the process is identical. Use the same 1:9 juice-to-kefir ratio, the same bottles, and the same timing guidance. Water kefir tends to carbonate quickly, so keep a close eye on pressure during warmer months.

Does second fermentation increase alcohol content?

Slightly. All fermented beverages contain trace amounts of alcohol, and longer ferments with more sugar will increase that marginally. To keep levels as low as possible, limit the second ferment to 48 hours, refrigerate promptly, and consume within 24 hours.

Do I need to add sugar, or can I use whole fruit only?

Whole fruit works on its own because it contains natural sugars for the yeast to feed on. Juicier, sweeter fruits like mango and passionfruit tend to produce better carbonation than lower-sugar options like berries. Adding a splash of juice alongside whole fruit gives more predictable fizz.

How much kombucha should I keep back for my next batch?

Before you start bottling, set aside roughly 10 to 15% of your finished kombucha as starter liquid for the next first ferment. That's about one to two cups from a standard batch. Your SCOBY needs this acidic liquid to get going again, so if you bottle everything, you'll have great second ferments but nothing to restart with.

Caution: Kombucha and water kefir second ferments can become very fizzy. Open bottles carefully after fermentation. All fermented foods contain trace amounts of alcohol. If preparing fermented beverages for children, breastfeeding mothers, or pregnant women, seek medical advice before consuming.
