Disappointing

Unfortunately my first attempt at making Kefir was unsuccessful. Followed the instructions so not sure what went wrong. Perhaps the grains were too long in transit. perhaps I waited too long before trying them out. Who knows.

Milk kefir is a wild fermentation and can be sensitive to factors like seasonality and temperature. It also takes up to 6 batches for the grains to fully acclimatise to their new environment. Transit time and delay in acclimitisation can affect early batches, but the grains are remarkably resilient and usually bounce back with care.

Here are some helpful tips for success:

For the first 3 batches, use 125ml of full cream milk (preferably Jersey or A2) instead of 250ml.
Keep the jar in a warm spot in your kitchen and shake gently whenever you walk by to keep the grains active.
You can leave the ferment for up to 3 days before straining, depending on your taste preferences.
Kefir is ready when it tastes yeasty, cheesy, or sour—it doesn't have to be thick or fizzy.
Grains will only start to grow once they’ve matured and adjusted to your environment.

Hello Milk

I was motivated to make milk kefir for its health benefits for my family. My body has repelled straight milk all my life so with some trepidation I second fermented some with berries and gave it a try. I have discovered my problem of the past 77 years must have been lactose intolerance (cheese and yoghurt have been fine). I am loving it. Feel great, sleep better and look forward to my glass at bedtime.
