I bought this kit along with Caldwell’s starter culture to have a go at creating my own cultured vegetables. It worked like a charm. The glass weights are shaped so they are very easy to put in and take out. The silicone tops are amazing. I packed my cut vegetables in 1 litre jars and added the glass weight on top. I followed the instructions on the culture insert: dissolve 3 teaspoons salt in 2 cups spring water and dissolve 1 satchel of starter culture in 1 cup of spring water. These were enough for 2 jars. I had excellent results with everything I tried: 1 jar of fennel bulbs, 1 jar of quartered radishes, 1 jar of cauliflower florets with fresh oregano, lemon zest and dried chilies, 1 jar of cauliflower florets with fresh oregano, lemon zest and fresh chilies, 1 jar of julienned turnip plus julienned 1/2 beetroot plus garlic, 1 jar of julienned turnip plus julienned 1/2 beetroot plus caraway seeds (this one turned out to be my utmost favourite). I left them a little over one week to ferment, and they all turned absolutely delicious. The photos are of turnip/beetroot ferment I just prepared, everything in this jar will turn dark red (take the beetroot colour) by tomorrow.
