Nourishing Pumpkin Kefir Soup

✓ 500g Pumpkin

✓ 1 Sweet Potato

✓ 1/2 Cooked Beetroot

✓ Nutmeg

✓ Salt

✓ Freshly Ground Black Pepper

✓ Roasted Pumpkin Seeds

✓ Creamy Homemade Kefir (Left on a Sieve for 8 Hours)

✓ Chilli Oil

✓ Pumpkin Seed Oil



In a large saucepan, gently fry the pumpkin and sweet potato. After a few minutes, add beetroot, spices and water. Cook on medium heat until the pumpkin becomes tender. Use a blender stick or any available food processor or standard blender to blend ingredients into a fine puree. 

Serve up puree into serving bowls, and top with heaped spoonfuls of creamy kefir. Sprinkle with chopped roasted pumpkin seeds and drizzle with pumpkin seed oil. Enjoy!
