Stuffed Mushrooms

If you are looking for a wonderful stuffed mushroom recipe, this is it! It can be made vegetarian, vegan, or carnivore. It is super easy to make and very tasty. You can serve this with a salad or as an appetizer! This recipe came to us from Lindel in the Gut Health Guru’s Facebook Group!

 

Ingredients: 

 

- Field mushrooms

- Mushroom stalks

- 1 quarter onion chopped

- 1 garlic clove chopped

- Almond meal (up to 2 tablespoons)

- Half of an avocado

- 2 tbsp of labneh or kefir cheese 

- Salt and Pepper to taste

- Parmesan (optional) 

- 1 piece of bacon or 1 slice of ham (optional)

- Breadcrumbs (optional)

 

Method:

 

  1. Fry up chopped mushroom stalks, onion, garlic, & bacon gently until cooked
  2. Mix with the rest of the ingredients in a bowl
  3. Spoon into mushroom caps, grate extra Parmesan over the top
  4. Bake in 180 degree for 10 to 15 mins (until warmed through)
