Banana Bread

Do you have ripened bananas in your freezer waiting to be used? If so, this is the recipe for you! It’s a healthier banana bread recipe using a sourdough starter which is full of healthy bacteria, is easier to digest, and contains minerals unlike other breads! And by adding the walnuts you get the added benefits of antioxidants. This recipe came to us from Nicky in the Gut Health Guru’s Facebook Group! 

Ingredients: 

- 1 1/2 cups plain flour

- 1 cup sugar

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1 cup sourdough starter (make your own instant sourdough starter)

- 1/2 cup softened butter

- 1 cup mashed ripe banana (about 2 1/2 medium bananas)

- 1 egg

- 1 teaspoon vanilla

- 1 cup walnut halves (or 3/4 cup chopped walnuts)

Method:

  1. Preheat the oven to 180 degrees and grease a loaf pan with butter.
  2. In a medium bowl, whisk together the flour, baking soda and salt; set aside.
  3. In a separate large mixing bowl (or bowl of a stand mixer), cream together butter and sugar.
  4. Beat in egg, vanilla, sourdough starter, and mashed banana. Gradually beat in flour mixture until well combined. Scraping the bowl occasionally as you go then stir in chopped walnuts.
  5. Scrape batter into a greased loaf pan and smooth out the top.
  6. Bake at 180 degrees for 60-70 minutes or until well browned and a toothpick inserted in the center of the loaf comes out clean and enjoy!
