Chocolate Martini Mocktail

If you are looking for a wonderful, healthy, chocolate martini for Christmas, this is it! Unwind with a chocolate martini mocktail full of gut friendly fibre, rich in prebiotics, antioxidants and magnesium. 

Ingredients:

1 teaspoon Organic Cacao Powder

1 teaspoon of Marine Collagen Peptides

1/4 teaspoon of Acacia Fibre

Your Choice of Milk/Mylk

Directions:

  1. Add 1 teaspoon of Organic Cacao Powder, 1 teaspoon of Marine Collagen Peptides, 1⁄4 teaspoon of Acacia Fibre to your favourite milk/mylk. Stir and enjoy!

Cacao is rich in polyphenols (feeds good bacteria), antioxidants and magnesium. Marine collagen peptides help to heal the gut lining and is also great for skin health. Acacia Fibre is a gentle FODMAPs friendly prebiotic fibre that doesn't cause any bloating.

Refreshing Cranberry Hemp Kombucha Mocktail

 This refreshing mocktail uses homemade Kombucha as the hero ingredient, perfectly balanced with cranberry juice, lime and hemp seed oil. Kombucha contains naturally fermenting probiotics that helps maintain healthy gut flora which can improve digestion, fight candida overgrowth, improve mental clarity and stabilize moods. The hemp seed oil provides essential fatty acids Omega-6 and Omega- 3, and the combination of homemade kombucha and hemp seed oil can help modulate blood sugar. A beautiful addition to any Holiday celebration. 

 Yield: 560ml (makes two servings)

 Ingredients:

- 500 ml homemade Kombucha (chilled)

- 2 teaspoons hemp seed oil

- 1⁄4 cup of Organic Cranberry Juice (chilled)

- 2 ice cubes

- 2 wedges of lime

 Directions:

  1. Combine ingredients in a blender.
  2. Cover and blend on medium until well mixed.
  3. Serve immediately into two glasses with an ice cube and a wedge of lime.

 To really reap the benefits from the kombucha in this recipe, I would strongly recommend using a home-made version, which is super simple to do at home. Here is a step by step guide on how to make Kombucha.

 

Mint & Lime Kombucha Mojito

This cocktail is based on the classic mojito but unlike the original version it is rich in natural vitamin C, vitamin B, antioxidants and minerals that help to maintain a happy and healthy gut. It is a refreshing holiday treat that you can feel good about.

 Ingredients:

- 1.7L of Homemade Kombucha (from First Fermentation)

- 2 Sprigs of Fresh Mint Leaves

- 2 Limes

- 2 Tbsp Rapadura Sugar or Coconut Sugar (Optional)

 Method:

  1. First, squeeze the limes to produce fresh lime juice.
  2. Combine the lime juice with mint leaves, a splash of kombucha and sugar (if using).
  3. Strain mixture through wire mesh sieve and collect minty lime juice.
  4. Pour kombucha into fermentation bottles and equally distribute mint lime juice into bottles.
  5. Allow to ferment for 3-10 days.
  6. Chill before serving. Enjoy!

Strawberry Kefir Daiquiri

 This recipe is perfect for anyone who enjoys a sweet tipple. It is packed full of natural probiotics and rich in vitamin B, vitamin K, vitamin C, and essential amino acids. Add marine collagen to help heal the gut lining. The homemade water kefir can help modulate blood sugar which is important to prevent weight gain.

 Yield: 500ml (makes two servings)

 Ingredients:

- 250 ml homemade water Kefir chilled

- 1/2 to 3/4 cup frozen organic strawberries

- 1 teaspoon Organic Camu Camu Powder

- 1 teaspoon Marine Collagen

- Stevia to taste

 Directions:

  1. Combine ingredients in a blender.
  2. Cover and blend on medium or high until smooth.
  3. Serve immediately.

Gluten Free Fruit Cake

If you are looking for a delicious and healthy gluten free fruit cake to serve your family this holiday season, this is it! It is also gut friendly because the fruit is soaked in kefir which makes it even better for you. This recipe came to us from Kathryn in the Gut Health Guru’s Facebook Group.

Ingredients:

- 1 kg dried mixed fruit

- 2 ¾ cup milk kefir

- ¼ cup coconut flour

- 2 cups gluten free flour

- 1 ½ tsp mixed spice

Directions:

  1. Soak fruit in milk kefir for 2-3 hours
  2. Sift the flour into the fruit and gently mix with the mixed spice
  3. Preheat oven to 160 degrees Celsius
  4. Bake in a small tin for approx 40 minutes

Healthy Spice Cake

If you are looking for a healthy, yet delicious cake, this is a wonderful option! You can use either monk fruit sweetener which is a natural zero calorie sweetener that is full of antioxidants or Rapadura Sugar which is one of the healthiest sugars available! It also uses Milk Kefir Cheese for the icing so it has probiotic benefits as well. It is a beautiful addition to any holiday dessert table. This recipe makes (1) 8” or 9” inch cake. It came to us from Patrice in the Gut Health Gurus Facebook Group!

Ingredients for Cake:

-1 cup fresh-ground whole wheat flour

- ½ cup sourdough starter

-⅜ cup whole milk

-½ to ¾ Monk Fruit sweetener or Rapadura Sugar

-½ cup barely melted coconut oil

-½ teaspoon vanilla extract

-1 or 2 eggs (use 3 eggs if doubling)

-½ teaspoon sea salt

-½ teaspoon ground cinnamon

-½ teaspoon ground cloves

-1/4 teaspoon allspice

-½ teaspoon (scant) baking soda (use ¾ teaspoon if doubling)

-½ teaspoon (scant) baking powder (use ¾ teaspoon if doubling)

Ingredients for Icing (all to taste):

-Kefir Cheese

-Pinch of salt

-Powdered monk fruit sweetener

Directions:

  1. Combine the starter, milk, and flour in a mixing bowl. Cover and let rest at room temperature for 8-12 hours (up to 24 hours)
  1. Preheat the oven to 350 degrees F, Grease (1) 8” or 9” square or round cake pan with coconut oil and set aside.
  1. In a separate mixing bowl, combine the monk fruit or Rapadura sugar, coconut oil, vanilla, and egg. Beat. Add sourdough mixture, salt, baking soda, baking powder, and spices, Beat until smooth
  1. Pour into the prepared pan. Bake for 25 to 35 minutes, until a toothpick inserted in the center comes out clearly. Remove from the oven and set on the rack to cool.
  1. Frost when cool. Store leftovers in the refrigerator.
